Multi-award winning bartender, Zach Sapato teamed up with Angelo Lo Greco of The Stables Bar to create a bespoke menu of unique mezcal cocktails to showcase his signature style.
First on the menu was the Gaviota with Zignum Reposado, Fino Sherry, grapefruit cordial, celery bitters and soda water. A stunning blue cocktail with a sparkly shimmer, it was surprisingly subtle and refreshing without being too sweet.
Both created with El Recuerdo Abocado con Gusano, the PolvoRise was a fruity number with Falernum, lime, Orgeat, passion fruit puree & black lime salt, while A Path Of Flavour is designed to take you on a journey through the flavours of Oaxaca with creme de cacao, El Bandarra Vermouth, Fernet Vallet, cardamom bitters and Sal de Chapulin.
To accompany the cocktails, the Stables Bar created an amazing menu of canapés, starting with Crispy Prawn Tacos made with golden-brown king prawns in tortillas with a fresh tomato and avocado salsa.
Next came the fluffy and succulent Sweet Heat Corn Fritters. Dotted with cilantro gel and spiced with fresh coriander, they packed a little kick from the candied chilli.
The Bold Beef Empanadas were the perfect dish for a cold night with tender braised beef infused with cumin and chill, a crisp flaky pastry and zesty lime crema.
The ideal pick-me-up, the Arriba! Andale! is Mexico's answer to an Espresso Martini with Zignum Reposado, cold brew concentrate, muscovado syrup, soy sauce and Angostura cocoa bitters.
However, our favourite was the Rancho Rosado with Zignum Reposado, lime acid, clarified strawberry juice and tonka beans. It was a beautiful fruity cocktail, served with a chocolate coated strawberry, making it the perfect end to a wonderful evening.
